Club Corowa was buzzing with excitement last Tuesday playing host to none other than multi-award-winning chef, author, and TV host, Matt Moran.
Moran, serving as the ambassador for the 2024 Your Local Club Perfect Plate awards, not only had the pleasure of sampling the club’s dishes but also had the opportunity to meet with the talented culinary team behind them.
The chefs behind Club Corowa's main and dessert entries for this year’s competition Dulan Dias and Tracey Jones, showcased two delectable creations: the Jillamatong Lamb Noisette and the Chocolate Hazelnut Meringue.
The Jillamatong Lamb Noisette highlights the finest local produce, sourced directly from Corowa's own Jillamatong farm.
Moran, visibly impressed, described the dish as “absolutely perfect,” emphasising its tender texture and the exquisite combination of flavours.
The dish features a signature confit garlic mash, Dutch carrots from Berrigan drizzled with Beechworth Honey, peas, and a fragrant rosemary jus.
Equally tantalising was the Chocolate Hazelnut Meringue, which celebrates the richness of local ingredients, including chocolate and Whisky sourced from the Corowa Distilling Co.
Moran couldn’t get enough of this dessert, praising its indulgent flavours and the innovative use of local whisky.
